Soup for When You're Sick

(1)  Hot and Sour Soup

          Slice coarsely and simmer in oil:    lemon grass
                                                                     fresh peeled ginger

          Add and heat:                                  coconut milk
                                                                    vegetable broth

          Add and heat:                                 snow peas
                                                                   brown sugar
                                                                   tofu, in small cubes
                                                                   fresh tomato, diced
          Turn off heat.
          Chop and add:                               fresh cilantro
                                                                   fresh basil

          Add and serve:                               lime juice
                                                                   fish drops

(2)  Miso Soup

          Stir 1 Tbsp Miso Paste in 1/2 cup water.  Reserve.
          Bring 1 cup water to boil
          Add 2 tsp shredded dried seaweed
          Slice thinly and add:  1/2 small onion, 1/2 small carrot, 1-2 shiitake mushrooms
          Cook until vegetables are soft.
          Turn off heat. 
          Wait 5 minutes.
          Stir in Miso mixture and serve.

Doctor's Notations:
     These are healing concoctions.  They are easy to digest and contain important anti-inflammatory and immune-boosting substances that promote health.  The ingredients may be found at most Chinese grocery stores and are not expensive.  Studies on miso have shown a 50% reduction in breast cancer in women who eat one serving of miso per day.  Miso should not be subjected to high temperatures or boiled because the important microorganisms which make it so effective will be destroyed.  Miso is an excellent source of probiotics.
