This recipe is quick and practically foolproof. Great for drop-in guests. You can cut the portions it in half, using 3 egg, and a 13 x 9 pan, if you're modest, but you'll miss them when they're gone.
7 large eggs
2 cups sugar
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
4 cups chopped dates
2 cups chopped pecans
Whip eggs until foamy. Add sugar and vanilla, while beating continuously. Stir in flour, baking powder and salt until well-combined. Add dates and nuts, and pour into a greased jelly-roll pan. Bake at 350 degrees for 10 min, then turn oven down to 325 degrees and bake 30 minutes more. Don't over-bake!
