Peanut Butter Cookies

     Two or three of these cookies will carry a doctor through an entire afternoon of patients without the slightest drop in energy--and they're gluten-free.  One medical study showed that overweight women who eat peanuts every day are more successful at losing weight than women who don't eat peanuts.  The explanation posited was that peanuts are so full of protein, and so satisfying that the thought of food disappears for many hours after eating them.  
     If I had to choose just one food to eat for the rest of my life on a desert island, it would be peanuts.

3 eggs
2 cups sugar
2 tablespoons maple syrup
2 teaspoons baking soda
3 cups peanut butter (or a mixture
    of peanut, almond or cashew butter)
1/2 cup rice flour, or gluten-free flour,
     or quick oats
1 teaspoon vanilla

Preheat oven to 375 degrees.   Beat eggs, add remaining ingredients, and mix well until smooth.  Roll into 1-inch balls and place 2 inches apart on greased cookie sheet.  Flatten tops with a fork, making crisscrosses.  Bake for 10 minutes, or until golden brown.  Makes 4 dozen.
